We had been planning a summer camping trip with our friends Mary and Dale. We've been camping with them before, last summer we camped near Estacada. It was literally the HOTTEST weekend of the summer, and the beautiful evergreen trees in the campground turned the area into an oven. And we camped with another family who had a trailer, so cooking wasn't that difficult. This year we hoped for cooler weather, but the same great memories.
This summer we were on our own kitchen wise, or in other words - NO KITCHEN. So we had to figure out what to cook, we asked around, did some looking for "camping recipes" and we came across pie irons. It led us on a mad search for pie irons around town. We liked the idea of the cast iron, so we ordered some from Cabella's - just in time for our trip.
At camp, we seasoned our irons got them ready for cooking. And it turned out to be the best thing since sliced bread!! Saturday morning, we made scrambled egg, cheese and sausage pockets. And Saturday night...Pizza Pockets!! Oh, they were yummy!!
Butter the outside slice of bread (in this case some very yummy sour dough), spread inside of bread with pizza sauce, layer with pizza ingredients, spread sauce on inside of second piece of bread and butter the outside. Place in the pie iron, close and place the pie iron in the camp fire.
Cook to desired donenss and serve.
Oh the yumminess of it!! So good. And the ideas for the pie irons are endless. Breakfast sandwiches, grilled cheese and meat sandwiches, pizza pockets, burritos or quesedillas. And desserts - we are going to try apple turnovers, and cherry pie is another idea.
Mary and I think that next time we camp we will just bring things to make in our pie irons, easy to make, easy to clean-up. Kids like them, adults really like them. We will not fret about planning our next camping meals again.
